Fresh truffle processing - cleaning, grading,
washing, drying and warehousing
The processing is done in our factory in which there are
30 workers including a QA group of 5 workers.
Use truffle brushes to clean the dirt, mud, foreign materials
off the truffle. Dispose of the truffles with superficial
deteriorations and appearance defects.
Grading is based on the size. Since the round shape of the
truffle is irregular, the callipers are used to measure the
longest diameter of every truffle.
Due to the stricter customs regulations on the import agricultural
products, the truffles should be washed.
Our truffles are washed with drinking water and will be finished
within 15 minutes. Few other suppliers wash the truffle with
drinking water.
A blade-type blower is used to dry the truffles. It's the
best drying equipment for the truffles after many years of
trials and errors.
NOTE: It's worth mentioning that the loss rate is around
15% after the above four processes are completed. We've seen
some suppliers offer the fresh truffle at very low price (around
USD 12$) - it's almost certain that the truffles offered are
not washed.
After they are dried, the truffles will put into our fridge
room (2-5 centigrade). Again, few other suppliers have their
own fridge room.
